I made the huge mistake of stepping on the scale the other day. Not that the scale changes the actual shape of my body, but there's something about seeing that number. The indisputable evidence of what you've been feeling.

Stuck safely at home, we've all been moving less and eating more. I can't be the only one with this problem. Not that an abundance of food and leisure time is truly a problem. Still, something's gotta give. Since the only change that's been made to our lockdown here in Scotland is that we can now exercise outside more than once a day, I've decided to start jogging again.

I hate jogging. Turns out, I hate it slightly less than riding an exercise bike, even if you can watch TV while you're pedalling. I'm trying to shift my mindset around running, but the resistance is major. We'll see how it goes.

Things would probably be much easier if I was willing to give up unhealthy but outrageously delicious food. I'm not. This bacon, egg and cheese sandwich is seriously the best. It's 100% comfort food.

The thing I love about it is that it's always unplanned because we only make it when we have bacon left over form another recipe. I might also enjoy it so much because it's one of the few things that my husband cooks. So I get crisp bacon, and a gooey egg with cheese and mayo between toasted bread without having to do anything.

How to make The Best Bacon Egg & Cheese Sandwich

This is the perfect fridge raid recipe. Don't be too prescriptive. Use whatever bread and cheese you already have in your fridge. Cook up as many slices of bacon you have hanging out in your fridge needing to be cooked and eaten. Do make the bacon nice and crispy. Do keep your egg yolk drippy. Definitely do not try to make anything about this sandwich light. This is a treat, and you deserve it.

All we gotta do here is fry up some bacon, make toast, spread mayo, and add cheese. Fry your eggs in the fat from the bacon, bathing them in bacon fat with your spatula as they cook. The moment the whites are set, whisk the egg away to the waiting toast, pile on the bacon, and make sure you have plenty of napkins. It's ridiculous.

The Best Bacon Egg & Cheese Sandwich

Turn the extra bacon in your fridge into the best bacon egg and cheese sandwich ever.

Ingredients

  • 6-8 slices streaky bacon

  • 2 eggs

  • 4 slices sandwich bread

  • 2 tablespoons mayonnaise

  • 2 slices cheese or 4 tablespoons shredded cheese, whatever type you have

  • Ketchup, optional

Directions

  • Put a frying pan over medium heat and add your bacon strips. Just cook up whatever extra bacon is in your fridge. Turn your bacon slices occasionally, every five minutes or so, until it's cooked to your liking. We like it extra crispy. Once the bacon is cooked, transfer it to a paper towel-lined plate to drain a little bit.
  • While your bacon is cooking, start making your toast. We just use regular sandwich bread. Toast it to each person's ideal level.
  • Once your toast is ready, add a thin layer of mayo to each slice of bread. If you can get someone else to do this for you, even better. If there's time, you can add the cheese to each sandwich as well. The warmth from the toast will start to melt your cheese ever so slightly.
  • Crack one egg at a time into the pan you cooked your bacon in. Try to crack it close to the front edge of the pan so that you can tip the pan toward you to allow the bacon fat to pool up around the egg. Use your spatula/turner to gently flick the hot grease up over the egg to sort of bathe it in the bacon fat. When the egg white is completely set, use your spatula/turner to remove the egg from the pan and add it to one of the sandwiches on top of the cheese. Repeat with the second egg.
  • Add three or four slices of your crispy bacon to each sandwich and top it with the other slice of bread. You can add some ketchup before closing everything up if that's your jam. You know, like a sandwich.
  • Eat immediately. Prepare to have egg yolk dripping down your hands. Experience breakfast bliss.
